Spa Village Resort Tembok Bali: Recipe: Kare Ayam

Kare Ayam is a delicious Indonesian chicken curry dish with plenty of flavour. This dish is a speciality at Spa Village Resort Tembok Bali.  To try it for yourself follow this recipe.

INGREDIENTS (serves 6):

  • 400 g free range chicken, cut into pieces
  • 360 ml chicken stock
  • 200 ml coconut milk
  • 160 g eggplant, cut into strips
  • 160 g cauliflower, cut into florets
  • 100 g courgettes, cut into oblongs
  • 100 g long beans, cut into smaller pieces
  • 1 tsp salt and pepper
  •  
  • For the Paste:
  • 100 g galangal, chopped
  • 150 g shallots, chopped
  • 100 g garlic, chopped
  • 50 g turmeric, crushed
  • 100 g red chilli, chopped
  • 80 g candlenuts, chopped
  • 100 g Chinese ginger, chopped
  • 50 g shrimp paste
  • splash cooking oil

METHOD:

Step 1

Grind all the paste ingredients (except shrimp paste and cooking oil) together and sauté with the shrimp paste and a little bit of oil.

Step 2

Add the chicken pieces and sauté in the paste for 3 to 5 minutes, then add the chicken stock.

Step 3

Allow to simmer for 10 minutes. Add the vegetables and, lastly, pour in the coconut milk. Continue to simmer until the aroma of the coconut has come out, then add salt and pepper to taste before serving, preferably with steamed rice.
